 The Corporate Chef Shahar hails from Israel, but it is in the United States of America that he developed his savoir-faire. Born in Brazil, home to the largest Japanese community in the world, Chef Wagner discovered the Nippon universe from an early age. Educated in a Japanese school, he tasted his first sushi at the age of 6! A few years later, he moved to Paris where he joined a Japanese gastronomy school. Nominated French Champion (2017) and Vice-World champion of sushi (2018), his career led him to different places such as London, Ryadh, Saint Barth, and Monaco. Today, this master of tastes, flavors and preparation techniques is the Executive Sushi Chef of THE NIWAKI restaurant, offering his guests a fascinating gustatory journey to the land of the rising sun.

Head Pastry Chef, Ilaria Viano

Born in Italy, Ilaria moved to France in 2011. Previously part of some of the prestigious French gourmet Maisons in Paris, she then discovered the world of Japanese gastronomy in Monaco.
Doted of a mesmerizing talent and an undeniable savoir-faire, our Head Pastry Chef brings her touch of sweetness to our À la carte menu, making our guests’ taste buds vibrate by taking them to new heights of sweet nippon wonders.
