Executive Sushi Chef, Wagner Spadacio

Born in Brazil, home to the largest Japanese community in the world, Chef Wagner discovered the Nippon universe from an early age. Educated in a Japanese school, he tasted his first sushi at the age of 6!A few years later, he moved to Paris where he joined a Japanese gastronomy school. Nominated French Champion (2017) and Vice-World champion of sushi (2018), his career led him to different places such as London, Ryadh, Saint Barth, and Monaco. Today, this master of tastes, flavors and preparation techniques is the Executive Sushi Chef of THE NIWAKI restaurant, offering his guests a fascinating gustatory journey to the land of the rising sun.

Head Chef, Nicolas Largillet

Chef Nicolas, a cook at heart. It was at the very beginning of his career, during a front of house team experience which ultimately turned out to be brief, that the Chef realized that his place, his passion, was in the kitchen. His journey then takes another turn; trained in renowned gastronomic houses, he flew to Canada then to the four corners of France where he perfected his know-how. But it was especially during an experience in the city of Hiroshima in Japan that he immediately fell in love with Japanese cuisine. Now Chef of THE NIWAKI restaurant since its opening, Nicolas, both down to earth and creative, has created a culinary imprint specific to the restaurant thanks to his passion for the best ingredients, flavor combinations and his taste for presentation of plates.
